Every drop of Lilium counts: towards a plastic-free future in the oceans.

Podere dei Folli has chosen Nomacorc Ocean by Vinventions as its innovative closure for its flagship white wine. This solution, made with recycled plastic from coastal areas at risk of pollution, not only contributes to ocean protection but also reinforces the winery's environmental commitment. This choice demonstrates Podere dei Folli's strong support for the UN 2030 Agenda for Sustainable Development, thus contributing to the preservation of marine ecosystems.

Vintage: 2023

Area of origin: Valtènesi, Soffaino hills

Grape variety: Groppello, Incrocio Manzoni, Trebbiano Valtenesi

Harvest: Harvest in crates, selecting the best bunches

Production: Once harvested, the grapes are immediately taken to the winery. The red grapes are pressed immediately, selecting the core of the berry, while the white grapes undergo cryomaceration.

This process occurs immediately after pressing the grapes and before fermentation: the must and skins remain in contact for 12-24 hours, chilled to a temperature of 5-8°C, to extract the grape's primary aromas, present in the inner part of the skin. This produces wines with more intense, fruity, and defined aromas. The low temperature prevents alcoholic fermentation from starting, while also extracting less color, bitterness, and astringency.

The resulting must is left to settle for 15 days at low temperatures to remove impurities. Once the impurities have settled, it is separated from the lees and alcoholic fermentation begins at a controlled temperature of 16°C, to promote the development of aromas, smoothness, and elegance. After fermentation, it ages in steel barrels for 5-6 months before being bottled.
