Every drop of Lilium counts: towards a future without plastic in the oceans.
Podere dei Folli has chosen Nomacorc Ocean by Vinventions as its innovative closure for its flagship white wine. This solution, made with recycled plastic from coastal areas at risk of pollution, not only helps protect the oceans but also strengthens the company’s environmental commitment. This choice demonstrates Podere dei Folli’s strong support for the UN 2030 Agenda’s sustainable development goals, thus contributing to the preservation of marine ecosystems.
Vintage: 2023
Origin area: Valtènesi, Soffaino hills
Grape varieties: Groppello, Incrocio Manzoni, Trebbiano Valtenesi
Harvest: Harvest in crates selecting the best bunches
Production: Once harvested, the grapes are immediately brought to the winery. Red grapes are pressed immediately, selecting the heart of the berry, while white grapes undergo cryomaceration.
This is a process immediately following grape pressing and before fermentation: the must and skins remain in contact for 12-24 hours cooled at a temperature of 5-8 °C, in order to extract the primary aromas of the grape present in the inner part of the skin. This way, wines with more intense, fruity, and defined aromas are obtained. The low temperature prevents the start of alcoholic fermentation and, at the same time, extracts little color, bitterness, and astringency.
The must obtained is left to settle for 15 days in cold to allow impurities to drop. Once settled, it is separated from the lees and alcoholic fermentation begins at controlled temperatures of 16 °C to promote the development of aromas, softness, and elegance. After fermentation, it matures in steel tanks for 5/6 months before bottling.
