COLD EXTRACTED
Our Extra Virgin Olive Oil comes from a small facility in Calabria, with which we have collaborated for 25 years. Within it, the company has developed a control system capable of monitoring all stages of processing.
Superior category olive oil obtained directly from olives and solely by mechanical means.
Our oil
The olives used for the production of Girolomoni oil are mostly of the Carolea variety (mainly because it allows for a sweeter and more balanced taste), Grossa di Cassano, Tondino, Dolce di Rossano. Defoliation and washing take place with state-of-the-art machines which, thanks to special air flows, are able to keep the olives intact during the various stages.
The olives, cleaned and free of residues, are then crushed and placed in special steel tanks. The resulting olive paste is then cold-extracted and separated into three parts: water, pomace, and the excellent extra virgin oil, which we offer in 75 cl bottles.
