Pacchero from Pasta di Canossa is made with 100% Italian semi-whole durum wheat semolina: the wheat is grown and processed at the Tenuta Cuniola estate in San Martino di Ferrara. The best wheat is carefully selected, grown, and processed locally, resulting in high-quality pasta.
Pasta di Canossa is an artisanal pasta with a rough and porous texture, perfectly holding its shape when cooked, with a light ochre color—characteristics of bronze-die extrusion and slow drying (14-22 hours).
Usage tips: The unique internal ridges and shape ensure the pasta absorbs sauce perfectly. Paccheri pair well with any ingredient, from fish to meat, and from vegetables to cheese.
