Premium coppa, 350 g: dry-cured pork coppa (Nackenspeck), lightly smoked and aged for about 10 weeks, to be sliced very thinly.
SEPP'Manufaktur's coppa, also called Nackenspeck, is made from pork neck (Vulkanland pork bearing the AMA quality seal). Traditionally, the meat is dry-cured with salt and natural spices, lightly smoked and aged for about 10 weeks. It is then washed, dried and packaged.
The outside is dry and reddish-brown, while inside the meat is deep red and marbled with fat. This specialty is a must-try for connoisseurs.
- Artisanally produced in South Tyrol
- Delicate aroma with a light smoky fragrance
- Aging: 10 weeks
- Strict, regular checks throughout the entire production process
How to enjoy it
SEPP'Manufaktur recommends slicing the coppa very thinly, like carpaccio, and topping it as desired with Parmesan, arugula, olive oil and, optionally, balsamic vinegar. Coppa is also delicious as a cold cut.
