Place of origin: Valtènesi, Soffaino Hills, in the area known as “Sofai”

Grape varieties: Groppello, Marzemino and Rebo

Harvest: Hand-harvested and placed in small crates

Production: At the beginning of October, the finest Rebo and Marzemino grapes are selected by hand and placed in crates, ready to dry in the loft. After losing 30% of their weight, the bunches are selected again and then crushed. Fermentation is very slow, with great care taken to preserve the aromas, extract the color, and manage the tannins’ sweetness and elegance. Once fermentation is complete, the wine is racked into barriques to optimize color stabilization and malolactic fermentation. It is then aged in second-use French barriques for 12 months, before being blended with Groppello, which was previously vinified in stainless steel tanks. The wine then ages in the bottle for a further 6 months before being released to the market.

WINE DESCRIPTION
The winery’s vineyards used to produce this wine are located in Valtènesi, on the Soffaino Hills in the area known as “Sofai,” meaning “beneath the beech trees.” In the shade of these trees, local farmers enjoyed lunch during their midday break in the summer months and rested their oxen.
The Soffaino Hills are in the Brescia Garda area on the western shore of Lake Garda, between Lake Lucone, a prehistoric basin and UNESCO World Heritage site of great archaeological importance, and the Sovenigo Lakes. The latter are the finest example of an intermorainic basin in the Garda area and offer a unique spectacle in July and August, when their waters are covered with pink lotus flowers.

TASTING NOTES
Intense, bright ruby red. The nose is immediately rich and penetrating, with aromas of woodland fruit and blackberry jam, elegant spice and hints of cocoa. On the palate, it has good body, excellent balance and great elegance, with tannins that blend seamlessly with the fruit.
