Cinta Senese PDO Ragù is the most authentic sauce from the Sienese tradition, made by La Dispensa Toscana with 50% Cinta Senese PDO pork, the native Tuscan breed recognized by the European Union with Protected Designation of Origin status. Slow-cooked with sautéed onion, carrot and celery, tomato, wine and extra virgin olive oil, it is a rich, full-bodied and lingering sauce that turns every pasta dish into an authentic culinary experience.

Why Cinta Senese PDO makes the difference

Cinta Senese is one of Italy’s oldest pig breeds, depicted as early as 1338 in Ambrogio Lorenzetti’s frescoes in Siena’s Palazzo Pubblico. Raised semi-wild in Tuscan woods and pastures, its meat stands out for its superior natural marbling and white, sweet, aromatic fat that melts slowly during cooking. In a ragù, this means a natural base that blends perfectly with the tomato; the meat does all the work, just as Tuscan charcuterie tradition intends.

How to use it in the kitchen

Heat the ragù over low heat for 3-4 minutes, stirring, without adding water. Drain the pasta while very al dente and toss it directly in the pan with the sauce for 30 seconds, adding a ladleful of pasta water to bind it. The ideal pasta is Tuscan Pici: the most traditional handmade pasta shape from Siena, but it also works perfectly with egg tagliatelle, pappardelle, rigatoni and fresh pasta in general.

For an even richer result: add a knob of butter off the heat and a generous sprinkling of grated Cave-Aged Pecorino. One 180g jar generously coats 2 servings.
