Why it's different from the usual cheese baskets

This isn't a random assortment: the nine cheeses span the full range of Tuscan cheesemaking tradition, from fresh to very aged, from classic to more distinctive. It includes soft caciotta, young and aged Pecorino Toscano DOP, pepper- and chili-flavored cheeses, Pecorino del Noce aged in walnut leaves, and Marzolino Imperatore.

Every producer in this Tuscan artisan selection is personally taste-tested before being added to the catalog. Individual vacuum packaging protects each cheese during shipping and makes it easier to store after arrival.

How to serve it: the Tuscan cheese board

L'recommended tasting order

Start with Caciotta Toscana, fresh and mild. Move on to Marzolino Paglia e Fieno and Pepper Cheese for more complex notes, then to Pecorino Toscano DOP and Aged Pecorino Toscano DOP for body and savoriness. Finish with Pecorino del Noce and Aged Marzolino Imperatore, the most lingering cheeses in the selection.

The cheeseboard wildcard

Chili Pepper Cheese adds contrast: try it with a drizzle of acacia honey or extra virgin olive oil on unsalted Tuscan bread.

Pairings

A classic Tuscan pairing for aged pecorinos is honey: try organic chestnut honey with the more intense cheeses and acacia honey with the milder ones. Mustards, such as pear mostarda, pair well with Marzolino and young pecorinos; ripe pears, walnuts, and almonds complete the cheeseboard.

In your glass: Vernaccia di San Gimignano with caciotta and semi-aged cheeses, and a full-bodied red such as Vino Nobile di Montepulciano with aged pecorinos and Marzolino Imperatore.
